At The Studio: Pilpelchuma Salad

At The Studio: Pilpelchuma Salad

A friend gifted me a jar of strong pilpelchuma paste a couple of years ago, and I've been making and adapting it since. Here it shows up in a spicy yogurt dressing to top a Mason jar salad I threw together for lunch at the studio - romaine lettuce, mung beans, pepitas, and avocado...

Green Chile Whipped Goat Cheese

Green Chile Whipped Goat Cheese

This is the recipe I was working on when Sarah Lonsdale came to visit for an interview for Remodelista. Whipped goat cheese is simply combined with flecks of sautéed garlic and green chile resulting in an easy spread that pairs perfectly with a long list of things.

Heirloom Apple Salad

Heirloom Apple Salad

The sort of hearty salad I love - heirloom apples, shaved celery, and toasted nuts of your choosing. The dressing is crème fraîche spiked with rosemary, garlic and champagne vinegar

White Chard Stew

White Chard Stew

An A+ white chard riff on a ribollita, using anything and everything on hand.

At The Studio: Mung Quinoa Power Bowl

At The Studio: Mung Quinoa Power Bowl

A Mung Quinoa Power Bowl for lunch at the Quitokeeto studio. The base is simply mung beans and quinoa, and the magic comes from the deeply sautéed and spiced celery. It welcomes as many, or few, toppings as you like - roasted cherry tomatoes, salted dill yogurt, quick pickled red onions, chopped olives.

We mixed up this stunner of a cocktail to close out the week at the studio - vodka infused with dried dragonfruit as the base for vodka tonics. Pink overload!

Magic Ancho Chile Relish

Magic Ancho Chile Relish

This chile relish has been a staple this summer. it brings the fast magic - adding depth, raisiny-chile flavor, color, and dimension to all sorts of simple preparations. I'll list off a number of my favorites here.

Super Onigiri

Super Onigiri

I make these little on-the-go rice balls all the time with leftover rice, and whatever fillings and seasonings are convenient and on hand. These are made with leftover sprouted brown rice and cooked mung beans. They're filled with a bit of avocado, and I made a quick almond-butter + miso slather that I hit with the broiler for a quick flash.

Summer Melon Salad

Summer Melon Salad

A simple summer melon salad. Sweet chunks of melon combine with toasted almonds for crunch, serrano chiles and scallions counter the sweet, there's small dollops of crème fraîche, cilantro, and a wash of sake. A real summer refresher.

Seed Pâté

Seed Pâté

Make this seed pâté when you want something in your refrigerator that can easily assimilate into just about any snack or meal. The base is made of seeds that have been soaked for a stretch and then blended into a creamy, full-bodied puree. In this instance I've worked in fresh herbs and garlic, but it's not hard to imagine many different ways to approach the base. Finish seed pate with a bit of miso - for flavor, seasoning, and easy nutritional boost.
